The roots of tea drinking in Japan can be traced to the ancient proverb which tells of the saintly Buddhist called Darma who vowed a seven year sleepless devotion of the Buddha. In order to stay awake, the story goes, he cut off his eyelids and, where they fell, two bushes grew. The leaves of these plants which were, of course, tea bushes, acted as a stimulant, helping Darma complete his seven year ordeal. Even today in Japan, Zen Buddhism and tea drinking are inextricably linked.

Tea has been drunk in china from as far back as 2700 BC when the legend goes, it was discovered by the Emperor Shen-nung. While boiling his drinking water, the Emperor noticed some leaves fall off the branch of the wild tea tree into his pot. On tasting it, he discovered the leaves had imbued the water with a wonderful flavour - and so tea drinking was born.
